Take any store bought white tortilla, cover it with a thin layer of pizza sauce or tomato ketchup, then add any grated cheese over it, add your choice meat or veggies. It is better to cook out the meat and veggies( bell pepper and onion is my favourite) to ensure no extra water is there (add oregano, rosemary or any mix of dried Italian herb). Add more cheese to it. I usually use grated cheddar and mozzarella. Put it the oven at 180o C for 20 minutes, then finish with extra 10 minutes of the grill function. If you do not have oven please use the convection/pizza mode of your microwave or improvise it with flat pan on gas stove. That helps to bring out the smoky flavor. Top it with drizzle of olive oil, fresh arugula/basil leaves and half sliced cherry tomato. This my first blog post, please do not hesitate to contact me for more details.
